In a town full of hot Mexican joints, SOL Cocina is making a name for itself for its traditional and authentic cuisine inspired by Baja California in a friendly, relaxed setting. Serving up the delicious margaritas and other drinks at SOL is beverage director Colin Pflugradt. We sat down with Pflugradt to chat about odd drink requests, his cocktail preferences and one of SOL’s delicious creations.
Tell me about the oddest drink request you’ve gotten.
It might be a frozen margarita on the rocks. You can only get about 2 ounces of frozen margarita into a cup of ice and it’s very difficult to get even that much. That and that whole pickle juice back thing with shots now. If you need pickle juice to choke down a shot, you should be ordering a Cosmo.
What is your No. 1 pet peeve when working?
When people ask for a cellphone charger and get upset that we wouldn’t or don’t have one. I think we have had close to 10 of them stolen so not something we keep on hand.
What is your go-to drink when you’re at a bar other than your own?
A reposado tequila (Casa Noble, Fortaleza or Casamigos) on the rocks, no fruit.
What does ordering a Cosmo say about a person?
That they might be underage? Or my grandparents’ age?
What do you like about this drink, Berries and Bubbles?
It’s one of our most popular seasonal margaritas and I really love what the sparkling wine does to a margarita. Tequila and Champagne actually can go together in a very balanced way.
