You can’t miss it driving down Scottsdale Road in Old Town. The bright pink restaurant, Pink Pony, has been a key part of Scottsdale culinary history for more than 60 years. Now hitting its stride again with inventive dishes and delicious cocktails, this is a place you can’t miss.
We chatted with one of the people behind those cocktails, bartender Rocky Gallo, about what it’s like to be behind the stick at Pink Pony.
The Entertainer!: Tell me about the oddest drink request you’ve gotten.
Gallo: A negroni. Not a lot of people order it because it is such an old drink.
What it your number one pet peeve when working?
I like my wine bottles in a particular order—the way we have them in the system—so I get annoyed when coworkers move them.
What is your go-to drink when you’re at a bar other than your own?
A Tito’s martini, dirty and with three olives.
What does ordering a Midori sour say about a person?
I’ve actually never had anyone order it here. But they are probably a younger person and someone that likes something a little stronger tasting.
What do you like about this drink, the Bermuda Triangle Mule?
The toasted coconut is the kicker. It’s a sweet drink, but not too sweet, so you can drink a few of them.
MAKE YOUR OWN BERMUDA TRIANGLE MULE
3/4 oz. coconut rum
3/4 oz. key lime rum
3/4 oz. lime juice
Ginger beer
Coconut shavings
Add ingredients, fill with ginger beer, sprinkle coconut shavings on top.
